Dr. Cristy M. Bueno, Associate Professor, and Ms. Blessy Hanna M. Albaladejo, University Researcher, both from the Animal Products Science and Technology Division (APSTD) of Institute of Animal Science conducted the Basic Meat Cutting Operations Training at M. Montesclaros Farms Incorporated (MMFI), Valencia City, Bukidnon last March 26, 2022.
The training was participated by key employees and butchers of MMFI and some representatives from the M. Montesclaros Hospitality Corporation (MMHC). During the training, the participants were given hands-on activities to practice personal hygiene and sanitation and perform pork and beef carcass fabrication.
Dr. Bueno and Ms. Albaladejo delivered lectures on the Principles of Meat Handling; Personnel and Facilities Hygiene; Sanitation and Maintenance; and Carcass Chilling, Fabrication, Packaging and Storage.
As part of its food security thrust, MMFI is expanding its operations with a slaughterhouse and a meat cutting plant to produce farm-to-fork safe, quality, and premium meats. This venture is aimed to sustain the supply chain in the province to cater the meat consumption needs of the locals as well as the food service establishments.
MMFI is a private company engaged in livestock production of cattle, hog, poultry, and horse; genetics; feed nutrition; and veterinary technical assistance. The company is known for its consistent and strict implementation of biosecurity measures to ensure the safety of the animals, the farm, and the employees.
